If there is one thing I could not live without it would be easy meal solutions. There are so many nights that dinner is an after thought. While peanut butter and jelly is always an acceptable solution in my children’s opinion, as a mom I want to make sure they are getting all the nutrients they need to keep their active bodies up to speed. One thing that I love about this recipe is that when my husband asked me what was for dinner and I said Shrimp Risotto his response was, “Ohhh Fancy”…

To make Shrimp Risotto you will need:

Shrimp Risotto

Serve cooked Shrimp over rice with sautéed onions. A succulent meal and a perfect way to end the day.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • Gorton's Seafood Garlic Butter Shrimp Scampi
  • One Small Yellow Onion
  • One Roma Tomato
  • Brown Rice
  • Thyme as Desired

Instructions

  1. Dice a yellow onion.
  2. Open the package of Gorton's Shrimp and add both the shrimp and the onion to a skillet.
  3. In another pan follow the directions of your rice of choice. Make enough for 2-3 people.
  4. Once the shrimp is fully cooked add in the diced tomato and let it simmer for about 5 minutes.
  5. Once the rice is done cooking add all the ingredients together, add thyme as desired, and serve!
